Noob guide request: Upgrading/restoring/downgrading

hi all,

although not total noob, confused whole backup/restore process when comes ios/iphone's

i've had iphone since 3gs , have had every new iphone since, on iphone 6

when had iphone 5, , ios 7 beta released had try it, new ui looked cool enough test out despite of bugs/sluggishness.

now, recall, paid 3rd party $2.99 fee udid registration, worked , able install beta. now, funny part, wipe out current ios 6, fresh new install of ios 6 , shift + upgrade , upgrade ios 7 beta , reinstall of apps, readjust settings, , sync email/contact/settings , not. in fact did few times going each new beta ios 6 newest beta release, foolish , giant waste of time lol didn't mind.

now, here thread made , million dollar question, have ability full backup of current iphone 6 setup, meaning if test out ios 9 beta 1 , did not , wanted restore, restore bring iphone exact state in when backed up?

so, apps downloaded (and signed in) recent phone calls/messages thread saved, , of customizations have made through settings there. email accounts still signed in , not...

essentially, if "full backup" before possibly testing out ios 9, going get? or missing something.

also, if restore ios 9? select recent backup itunes? recall have ability select backup want.

wrap things up, main concern "backed up" in itunes,
have ability "back up" iphone in itunes, upgrade ios 9 beta 1, , if dont it, revert exact current ios setup (same apps installed , signed in, messages saved, call list saved) or not possible?
